Nice and easy to make. Rich in omega 3 essential fatty acids, and delicious!!

What you will need:

4 cups raw salad greens
2 cups cooked quinoa, brown rice, or millet (quinoa is my favorite)
½ pound smoked salmon
Ginger Garlic Dressing (recipe below)

What you need to do:
Place the greens in a bowl, add cooked grains if desired, crumble salmon over greens, and top with a few tablespoons of dressing.

Ginger Garlic Dressing (you can buy this or easily make it)
Serves 4 to 6

What you will need:

1 ½ cups water
15 cloves of garlic, peeled and left whole
2 tablespoons dry white wine (optional)
Juice of ½ a lemon
1/8 teaspoon dried sage
1/8 teaspoon dried thyme
Sea salt, if you must and only to taste
2 tablespoons minced parsley
Cayenne, to taste

In a saucepan, combine the garlic, sage, thyme, water, and wine. Simmer over a low heat for 20 to 30 minutes, until garlic is soft. Remove from heat, transfer mixture to a blender, and puree. Add the lemon juice and salt. Stir in the parsley and season with cayenne. Reheat over a low flame before serving.

Note: Cayenne pepper often comes in various heat levels. It is a great warming and energizing spice that is not usually irritating.
